One of the aspects of the tea is that the liquid changes color based on the pH level of the substance added.
Adding lime juice to the tea will turn it purple or add honey and lime juice turn the beverage a pink-purple color.
In Thailand, the flower is used as a natural food coloring to color glutinous rice and desserts. For example blue, purple, and pink sticky rice.
The flowers have more recently been used in a color-changing gin. Blue in the bottle, it turns pink when mixed with a carbonated mixer such as tonic water due to the change in pH.
How to Blew a Tea
The tea is found in both hot and cold varieties mixed with honey, mint, cinnamon, passion fruit, ginger, or lemongrass.
Blue Butterfly Pea with Lemongrass:
- 1 cup hot water
- 1 tsp dried Blue Butterfly Pea flower (8-10 pieces)
- 1 tsp dried Lemongrass (4-5 pieces)
- 1 tsp sugar or honey
- 1 wedge of lime or lemon
Directions:
- Add hot water in a coffee mug, add Blue Butterfly Pea flower, Lemongrass and sugar or honey.
- Stir it, until sugar or honey is dissolved. Let it sit about a minute for the blue color of the flower to come out. Squeeze the lime or lemon juice to change the color to purple-pink.
- Stir up, have a sip and enjoy your freashing blew Blue Butterfly Pea tea.
You can refill hot water to the cup once or twice as you wish.
A pitcher of Cold Blue Butterfly Pea tea with Lemongrass
- 2 liter water (8 cups)
- 1/3 cup Blue Butterfly Pea flower
- 1/3 cup dried Lemongrass
- 1/3 cup sugar or honey
- 1 lime or lemon
Directions:
- Add water in a pot, bring to boil. Add Blue Butterfly Pea flower, Lemongrass and sugar or honey.
- Stir it, until sugar or honey is dissolved. Let it sit about a minute for the blue color of the flower to come out. Squeeze the lime or lemon juice to change the color to purple-pink. You can add more sugar if you desire more sweet taste.
- Turn off the gas. Let it sit to cool off for about 4-5 minutes.
- Transfer the tea to a jar or pitcher using a fine strainer to filter out the flower and lemongrass.
- Refrigerate the jar of the tea for 4-5 hours or until it gets cold. Or serve immediately with Ice with a wedge of lime or lemon.
How to use butterfly pea flower to coloring the food:
Sometimes you may see Thai famous desserts Mangos sticky rice in blue, purple or pink.
Making those colors of rice is easy. All you have to do is get a Blue Butterfly Flower and you can turn into 3 or more colors of rice.
- 2 cup Cooked sticky rice
- 1 cup water
- 1/4 cup sugar
- 1/3 cup Blue Butterfly Pea flower
- 1 lime or lemon
- 1/4 tsp salt
Directions:
- Add water in a pot, bring to boil. Add Blue Butterfly Pea flower, sugar and salt. Stir it, until sugar is dissolved.
- Turn the gas off. Let it sit about 1-2 minutes for the blue color of the flower to come out.
- Place cooked sticky in a mixed bowl. Pour blue butterfly mixture into a sticky rice bowl, using a fine strainer to filter out the flower.
- Stir mix well, Now you get blue sticky rice. Devine the blue rice into 3 portions.
- Cut the lime or lemon into wedges.
- 1 portion of blue rice, squeeze 1 wedge of the lime or lemon juice to change the color to purple. Keep this one as purple rice. Stir well.
- Another portion of rice, squeeze 1-2 wedges of the lime or lemon juice to change the color to pink, the more lime or lemon juice you add to the rice it becomes more pink. Then you need to add a little more sugar to keep the rice sweet to balance it.
Now you get 3 color of your sticky rice, then slices mangoes and sever alongside the rice.
